Cream eggs, butter, vanilla and sugar together with a hand mixer. Add almond milk.
In separate bowl combine dry ingredients. Mix together and add slowly to wet ingredients. If too dry add a little more almond milk until the batter looks like a brownie consistency.
Fold in Pecans (optional) and Dark Chocolate Chips
Use spoon and place batter in a mini muffin pan and top with additional Dark Chocolate Chips.
Bake at 350 for 20 minutes. Watch carefully as almond flour browns quickly.
