A super easy and delicious casserole! Just like Mom used to make!

Old School Chicken and Rice Casserole

Ingredients
  

  • 1 rotisserie chicken (approx. 4 cups)
  • 1 (10.75oz) can cream of chicken soup
  • 1 (10.75oz) can cream of celery soup
  • 1 (10.75oz) can cream of mushroom soup
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • 1 cup water
  • 1 cup milk
  • 2 cups instant rice uncooked
  • 3/4 cup Parmesan cheese grated

Instructions
 

  • Preheat oven to 400F.
  • Lightly spray a 9x13-inch pan with cooking spray and set aside.
  • Remove skin and bones from rotisserie chicken and discard before chopping up.
  • In a large bowl combine chicken, soups, spices, pepper, water, milk and instant rice.
  • Pour into prepared pan and top with parmesan cheese.
  • Bake uncovered for 40-50 minutes.

    could you use uncle bens rice instead of the minute rice?

    Made this yesterday and it was really good! Even re-heated in the mic for a late night snack was good, but be sure to add a couple Tbs. of water to avoid drying out the rice when using the mic to re-heat! Thinking of putting a twist to this casserole with using hamburger instead of chicken and adding some sour cream for a “stroganoff” effect! What is the procedure for posting a couple of my own recipes? I make a killer Beer Cheese soup that’s great in the Fall/Winter for a football game event!! Thank you for all you and your readers do to make this site easy to navigate thru and print off the recipes to follow along with in the kitchen! Enjoy! 🙂
