Homemade Chicken Noodle Soup

When it’s cold outside nothing beats a hot bowl of homemade chicken noodle soup. This is a family favourite for the cold winter months and sick days

We’ve all experienced that feeling of being sick sick. Where you stay inside, feel terrible and make chicken noodle soup out of a packet/can. I can’t promise that this soup will make you get better sooner, but I can promise that it’ll taste way better than that store bought stuff!

This is actually my go to chicken noodle soup recipe for when my kids get sick. I say kids because in my house it’s never only one that gets sick, it’s all of them. As soon as the first sign of sniffles appears I whip up a big batch of this. After doling out a few large bowls to everyone I refrigerate the rest.

Homemade Chicken Noodle Soup

Why make store bought when you can make homemade chicken noodle soup fast and easy? Whether for a cold day or a sick day it's delicious!

Ingredients
  

  • 4 Cups chicken cut into bite size pieces
  • 2 medium celery stalks chopped
  • 2 Tbsp garlic minced
  • 3 large carrots chopped
  • 1 Tbsp dried onion minced
  • 1/4 Cup butter
  • 2 bullion cubes
  • 1 Bag egg noodles
  • 12 Cups chicken broth
  • 1/2 Tsp dried marjoram
  • 1/2 Tsp ground black pepper
  • 1 medium bay leaf
  • 1 Tbsp dried parsley
  • 1/2 Tsp black pepper
  • 1 Pinch salt

Instructions
 

  • In a large stock pot, saute celery and garlic in butter.
  • Add chicken, carrots, broth, bouillon cubes, dried minced onion, marjoram, black pepper, bay leaf, parsley and salt. Simmer for 30 minutes.
  • Add noodles, and simmer for 10 more minutes or until noodles are done.

    The dry onion. Soup is Lipton Onion soup and it’s on the soup isle…it’s in. A box

      DO NOT use Lipton Onion Soup, It’s dehydrated onion not Lipton Soup. It’s in the spice aisle.

    I make Chicken Noodle Soup often, and I love it. I use an already barbequed chicken from Costco for several meals, then put the carcass in a large pot of water, with onions, celery and (now I will put in carrots) with other spices…..use any variety of noodles, and instead of bullion cubes and broth I use a Chicken Soup mix from the Bulk Barn as the chicken carcass creates the broth I need.Of course you simmer the carcass and remove it to take excess chicken off to add to the pot ……and then you’ve got, delicious homemade Chicken Noodle Soup.

    Where do you find dried onion? Or can you use fresh in place?

      You can use fresh if you like, but the dried onion should be in the spice aisle 🙂

    I’m diabetic so I cook the noodles seperate, so I can control the amount of carbs, and just let everyone put noodles in their bowl and ladle soup onto them.

    RECEIPT doesn’t say how much liquid or broth to start off with ? Mostly dry ingredients?

      You can see in the second step that that’s when you add the broth

    Is the chicken pre cooked or raw?

      I always add cooked chicken. I usually cook a chicken the day before and I use the leftovers for soup.

      I use raw chicken in the broth and celery for approx 45 minutes. Then take out all of the bones (marrow is a healthty ingredient) cut up the chicken and continue with the recipe – using the raw chicken adds tons of flavor !

        I always use a whole raw chicken, fresh onions, celery and carrots, I never use bullion or any store bought broth. The raw chicken with the bones gives the best flavor. Instead of noodles, I add orzo to my chicken soup, can’t beat the flavor, it is awesome.
