Carrot Cake with Homemade Cream Cheese Frosting

This is one of my most popular recipes! Everybody loves carrot cake, so why not try making your own?

Sliced Carrot Cheesecake

This carrot cake recipe is the best and always tastes amazing with home made cream cheese icing!

It’s quick and easy to make and of course tastes so much better then store bought. Take this to your next get together or make for home to enjoy with that morning cup of coffee.

I make this all the time and it has become a favourite in our house. This moist carrot cake is welcome at birthdays, weddings, reunions and all special occasions.

I made this in a bundt pan but you can use any baking pan you wish!

The flavour is delicious- this will be a hit!

Carrot Cake with Homemade Cream Cheese Frosting

This carrot cake with home made cream cheese icing is the best and tastes amazing! Best of all is that it's easy to make!

Ingredients
  

Cake Ingredients

  • 2 Cups flour
  • 1 1/2 Tsp baking soda
  • 1 Tsp allspice
  • 2 Tsp baking powder
  • 1/4 Tsp salt
  • 2 Tsp cinnamon
  • 11/2 Cups sugar
  • 1 Cup oil
  • 4 eggs beaten
  • 2 Cups carrots grated
  • 1 (14oz) can pineapple do not drain

Cream Cheese Icing

  • 4 Oz cream cheese
  • 1 Cup icing sugar
  • 1/4 Cup butter
  • 1 Tsp vanilla

Instructions
 

Cake Instructions

  • Mix flour, baking soda, baking powder, salt, allspice, cinnamon.
  • Add sugar, oil and eggs and mix.
  • Add carrot and pineapple mix and put into a greased and floured cake pan.
  • Bake at 350 for 70 - 90 minutes
  • Cool and frost with cream cheese frosting!

Cream Cheese Icing

  • Cream butter and cream cheese
  • Add vanilla and icing sugar and mix!

      It’s also known as ‘confectioners sugar’ and ‘powdered sugar’, if that helps 🙂

    If you drop the allspice, double the cinnamon and drop the pineapple, add pecan pieces and raisins, the cake is perfect.
