Italian Chopped Salad
    • 3cups romaine
    • 1can can garbanzo beans or chickpeasrinsed and drained, 15 ounces
    • 1jar marinated artichoke heartsdrained and chopped, 6-1/2 ounces
    • 1medium green pepperchopped
    • 2medium tomatoeschopped
    • 1can sliced ripe olivesdrained, 2-1/4 ounces
    • 5slices deli hamchopped
    • 5slices thinhard salamichopped
    • 5slices pepperonichopped
    • 1/2small block Monterery Jack cheesechopped
    • 2medium green onionschopped
    • 1/4cup olive oil
    • 2tablespoons red wine vinegar
    • 1/4teaspoon salt
    • 1/8teaspoon pepper
    • 2tablespoons grated Parmesan cheese
    • 1small Pepperoncinioptional
    1. In a large bowl, combine the first 11 ingredients.
    2. For dressing, in a small bowl, whisk the oil, vinegar, salt and pepper. Pour over salad; toss to coat. Sprinkle with cheese.
    3. Top with pepperoncini, if desired.
