Easy Peasy Lemon Squares
    Ingredients
    Base
    • 1 1/2cups flour
    • 1/2cup icing sugar
    • 3/4cup butter
    Filling
    • 6large eggs
    • 1 1/4cups lemon juice
    • 3cups sugar
    • 3grated lemons
    • 1/2cup flour
    Instructions
    Base
    1. Mix flour and icing sugar.
    2. Using a pastry cutter, cut in butter until mixture resembles coarse meal.
    3. Bake at 325F for 20-25 minutes in a glass 9×13 baking dish.
    Filling
    1. Whisk eggs and sugar.
    2. Add zest and juice, mix well then add flour and mix well again.
    3. Bake at 300F for 30-40 minutes or until set.
    4. Refrigerate for at least 1 hour (best overnight) before slicing.
